Oatmeal Cookies 1.01 Pilot (My 200th Dish!)

“Sookie, I’m going to Chilton!” “I’ll make cookies. Protestants love oatmeal.” “I have to call Lane.”
Ingredients:
½ cup butter, softened
⅓ cup brown sugar
⅓ cup granulated sugar
1 egg
1 tbsp of instant coffee dissolved into 4 tablespoons of boiling water
1 tsp vanilla
2 cups all-purpose flour
½ tsp salt
1 tsp baking powder
1 cup rolled oats
Directions:
Preheat oven to 350 degrees F. Line baking sheet with a silicone mat or parchment paper.
In a large mixing bowl, cream together butter, brown sugar, and granulated sugar.
Once light and fluffy, add in the egg, coffee, and vanilla. Mix until fully incorporated.
Sift in the flour, one cup at a time, mixing in between. Then mix in the salt and baking powder until fully incorporated.
Fold in the rolled oats.
Using a cooking scooper or your hands, scoop out cookies. I made small ones because I had to make a bunch to spell out Eating Gilmore, but you can use a double scoop if you want.
Place cookies on prepared baking sheet and bake at 350 F for 13 minutes or until golden brown. After removing from the oven, flatten with the back of a spatula.

This is the 200th Gilmore Girls dish that I have recreated!! I only realized about a week ago, and quickly had to make plans to make something special. I thought it would be fun to go back to the pilot and do an encore with Sookie’s oatmeal cookies. In true Gilmore Girls fashion, I used the cookies to spell out ‘Eating Gilmore’ and ended up making over 100 cookies. For a moment, I was going to make 200 cookies in honor of my 200th dish, but once I hit about the 50 cookie mark and knew I’d run out of butter, I decided to scale back.
If you would have told me when I made the peach sauce back when I first started cooking my way through the show that I would be here with 200 Gilmore dishes under my belt, I don’t think I would have been able to believe you. But I’m so proud to have made it this far! What a fun and wild journey we’ve been on together. If you’ve been here since the peach sauce, thank you. If this is my first dish you’re seeing, welcome!
