Fried Shrimp 7.16 Will You Be My Lorelai Gilmore?

“So then my mom sticks her nosy head in and said, ‘the children are not gonna be eating fried shrimp.’ And I said, ‘not only are my children gonna be eating fried shrimp, they're gonna listen to whatever music they want and go to school dances, and they're not gonna spend their whole lives in church hearing about how doing all that makes them evil. In fact, they'll probably never set foot in a church at all. My kids are gonna have total freedom. End of story.’”


Ingredients:

For the shrimp:

  • 1 cup all-purpose flour

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp paprika

  • ½ tsp chili powder

  • 2 eggs, beaten

  • 1 tsp milk

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp paprika

  • ½ tsp chili powder

  • 1 cup Italian seasoned breadcrumbs

  • ½ lb raw shrimp, shells removed

For the sauce:

  • ½ cup mayonnaise

  • 1 tbsp dijon mustard

  • 1 tbsp pickle juice

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp paprika

  • ½ tsp chili powder

Directions:

  1. In a small bowl, combine the flour, and ½ tsp of salt, pepper, paprika, and chili powder.

  2. In a second small bowl, combine the eggs, milk, and ½ tsp of salt, pepper, paprika, and chili powder.

  3. In a third small bowl, add the breadcrumbs.

  4. Pat the shrimp dry with paper towels then season to your liking.

  5. Using a fork, coat the shrimp in the flour mixture. Then transfer to the egg mixture to fully coat the floured shrimp. Then transfer to the breadcrumbs to fully coat again.

  6. Place the breaded shrimp on foil in an even layer in an air-fryer basket then cook at 380 F for 8 minutes, flipping the shrimp at the halfway point.

  7. While the shrimp cook, prepare the sauce by combining the mayo, mustard, pickle juice, and seasonings in a small bowl.

This dish comes from the fight Lane has with her mom. Mrs. Kim doesn’t want Lane’s twins to eat fried shrimp, but Lorelai gets them to compromise that they won’t eat fried shrimp for at least a year. But there’s no waiting for fried shrimp over here! Well-seasoned and cooked in the air fryer, these shrimp are crispy and delicious! I also whipped a nice little dipping sauce to go with the shrimp. My third seafood dish in a row will now complete the seafood trifecta!
