Emily's Bullshit Cookies 8.04 Fall

“Crumbs, dear.” “Well, everything looks to be in order.” “Give us a few days to deliberate. We will get back to you.” “But I have to say, you're a delightful young woman, and we have so enjoyed meeting you.” “Bullshit!”
Ingredients:
For the cookie:
1 cup unsalted butter at room temperature
1 cup powdered sugar
½ tsp vanilla
½ tsp almond extract
2 cups all-purpose flour
½ tsp salt
3 tbsp raspberry jam or preserves
For the topping:
¾ cup powdered sugar
3 tbsp heavy cream
½ tsp vanilla
¼ cup freeze-dried raspberry powder
Directions:
In a large mixing bowl, cream together the butter and powdered sugar. Then mix in the vanilla and almond extracts.
Sift in the flour one cup at a time and mix until combined and smooth. Mix in the salt and jam.
Transfer the dough to the freezer and chill for at least 1 hour.
Preheat the oven to 350 degrees F.
On a floured surface, roll out the cookie dough to about ¼ inch thick. Use cookie cutters to cut out your desired cookie shapes.
Bake on a lined cookie sheet for 10-12 minutes or until golden brown. Transfer the cookies to a cooling rack and allow to cool.
Prepare the icing by combining ¾ cup powdered sugar with the heavy cream and vanilla in a small bowl and whisk until well combined.
Use a whisk or a fork to drizzle the icing over the cooled cookies. Sprinkle the freeze-dried raspberry powder on top.
One of my favorite moments of the revival was hearing Emily go off at a DAR meeting and Amy getting to step away from the WB guidelines. So in honor of Emily’s iconic line, I made the cookies she eats in that scene. We don’t really see what the cookies look like, but they seem to be a shortbread. And if you’ve been here for a while, you may know that I’ve made it headcanon that Emily loves raspberry desserts. I also tend to make my penultimate dish for the season a raspberry dessert (as we saw with the raspberry souffle for season 4, dark chocolate raspberry fondue for season 5, and the chocolate raspberry cake for season 7). So it felt fitting that I made raspberry shortbread cookies for my second to last dish for the revival.
