Bananas Foster Waffles 3.17 A Tales of Poes and Fire

“You know, you're right. Listen, all you people who were here before we invaded, are you willing to cancel your current orders for Sookie's famous blueberry-lemon pancakes, Belgian waffles or bananas foster?” “Sure.” “Sounds good.” “Okay, pull all of Luke's stuff off the grill and let's get cooking!”


Ingredients: 

For the waffles: 

  • 2 eggs

  • 2 ¼ cups all-purpose flour

  • 1 ½ tbsp baking powder

  • 2 tbsp granulated sugar

  • 1 ½ tsp salt

  • 2 cups milk

  • 1 tsp vanilla

  • 2 ripe bananas mashed

For the bananas foster: 

  • 4 tbsp butter

  • ⅔ cup brown sugar

  • ½ tsp cinnamon 

  • ¼ tsp salt

  • 1 tsp vanilla

  • ½ cup bourbon

  • 3 bananas, cut in half widthwise then sliced in half lengthwise

Directions: 

  1. Separate the egg yolks from the egg whites and set aside. In a small mixing bowl, beat the egg whites until soft peaks form. Set aside.

  2. In a medium bowl, mix together the dry ingredients: flour, baking powder, sugar, and salt.

  3. Gradually pour in the milk and stir until fully combined. Stir in the egg yolks and vanilla until fully combined then mix in the mashed bananas. 

  4. Gently fold in the egg whites. Be careful not to overmix and knock the air out of the batter.

  5. Turn on your waffle iron and grease with butter or cooking spray. Once heated, add about ¼-½ cup of the batter. Close the waffle iron and cook 1-3 minutes. 

  6. While the waffles cook, prepare the bananas foster by adding the butter to a large skillet and place over medium heat. 

  7. Once the butter melts, add the brown sugar, cinnamon, and salt. Stir continuously so that it doesn’t burn.

  8. After the sugar fully dissolves into the butter and the vanilla and alcohol gently to avoid splashing. Allow the alcohol to cook off for about 2-3 minutes. 

  9. Then add the bananas and simmer for 2 minutes. 

  10. Serve the bananas foster over the waffles with whipped cream. 


I can’t believe this is my first encore dish for season 3! I do remember there being quite a few episodes when I first covered this season when I either struggled to find something to make or there was only one dish from the episode I wanted to make. But I am excited to revisit this episode (for the third time actually). I combined two of Sookie’s dishes from this scene, Belgium waffles and bananas foster because, to me, it just made sense to pair them together! I also added bananas right to the waffle batter to really make sure that banana flavor comes through. You could definitely add walnuts or pecans to the batter or the bananas foster for a nice crunch as well.
